Do you like eating beets, but don’t know how to incorporate them into your meals? Ever go in the grocery store and walk by the beets and think about how you can cook them? Beets can be easily a part of your diet. Here are a couple different ways you can eat them!

RAW
These round, vibrant red vegetables are grown from the ground and can be eaten raw. All you have to do is peel the skin off, slice them, and add some lime juice and olive oil. You have just created your own beets salad! If you don’t want to eat the beets plain, mix them with other ingredients like quinoa, feta cheese or spinach to make a fancier salad. Eating beets raw is a simple way to get essential vitamins and minerals.

PICKLED
Unlike raw beets, pickled ones give you the sweet cucumber taste. You can pur-chase pickled beets from the grocery store; but it is also possible to make your own. It does take time, though, so plan ahead! You should definitely give it a try if you enjoy a sweeter taste. Similar to the raw beets, the pickled beets can be eaten straight out of the jar as well as tossed into a salad.

ROASTED
Don’t feel like eating raw or pickled beets? Try roasting them! Just cut the beets and mix with olive oil, thyme leaves, salt and pepper. Place them on a baking sheet and put it in the oven temperature for 30-40 minutes. During this time, turn the beets once or twice. Then take them out of the oven when they are tender and you are done! Add some goat cheese and hazelnuts to the roasted beets for a quick side dish.

JUICE
Instead of eating beets, you can blend your beets in a blender and make your own beet juice! You can add various fruits or vegetables and personalize your own drink. Be careful with the amount of beet juice you make because it can make your urine red; don’t be frightened if this happens; it isn’t harmful.

These are a couple simple ways that you can eat beets. They provide your body vitamins, minerals, fiber and that red pigment called betalain. It supports your body’s detox systems, among other things. Hopefully these creations will inspire you to be creative and find ways to eat beets!
